- 1 whole trout.
- Herbs (I used oregano, sage and rosemary as I had them in the garden).
- 2 cloves garlic.
- 1 lemon (sliced).
Heat your oven to 200c and put your trout (gutted buy your fish monger if you’re not confident doing this yourself) on foil.
Stuff with the ingredients and seal the foil around the fish making a parcel. Leave space at the top for steam to rise within the parcel, place on a baking tray and cook in the oven for 15 minutes.
When it’s done it should slide off the bone and be flakey and pink. I enjoyed mine with roast veggies and brown rice.
